Real barbecue, as enjoyed in the South is “low and slow”. It is smoked over a hardwood-stoked pit at low temperatures for hours, sometimes days at a time. It is then often slathered with sauce and served alongside a variety of dishes. Barbecue is the pure American result of a time intensive combination of smoke, meat and sauce, and Bernie’s makes the best there is.
